Abstract: In this thesis, small and mountains as the raw material collected acorns, oxidation with potassium dichromate - ferrous ammonium sulfate titration to determine anti-tannin content of acorns. The proceeds of acorns put in infrared oven drying at 90 ℃ for 5 hours, their skin peeled and, in order to sample the acorns Jen universal and diversity, will be rolling the acorns Jen 4 and sampling.On acorns in the grinding mortar to smash Ren, acorn flour sifted through 50 mesh sieve. The proceeds of the acorn powder put in infrared oven at 90 ℃ for determination of moisture content of acorns in the powder. Determination of the moisture content of acorns has been divided into 2 powder, placed in sealed bags, and put in the dryer in sealed bags to prevent moisture preservation.Experiments using potassium dichromate oxidation - anti-ferrous ammonium sulfate titration, after 14 hours, changing the water every 2 hours by the total tannin content of tannin content per 10g as 1.0764 or 10.764%, due to easy oxidation of tannin, conventional water extraction time required and relatively long, compared with the ultrasonic wave. The recovery experiments carried out tannins, recovery was 98.2%.
