Abstract: This article discusses about using two methods to determine in vitro digestion of whey protein peptides.There was a similar results between Formaldehyde titration and Ninhydrin method. We tested different mixing methods、different stirring speeds and different pH to match the difference between different groups of people. We also tested the digestion products of whey protein peptides and observeed that only some short peptides were digested.SDS-Page and HPLC support this point.
