Immobilization of Acetobacteria and Fermentation Characteristics Research
Abstract:The immobilized cell technology is becoming more and more important since its development in 20th century 60's. Now, it has been one of the key domains of bioengineering research and gained widespread industry applications. In our work, sodium alginate was used as the carrier to immobilize Acetobacteria 1.01 by embedding method. The optimal embedding conditions were studied. Immobilized particles with different cell density and different diameter were obtained and used for fermentation. During fermentation process, cell growth, substrate consumption and vinegar production were determined and compared with that of free cell fermentation .This work reveals the fermentation characteristics of immobilized Acetobacteria 1.01 and provides data for fermentation kinetic research.
