Abstract:The process of extracting flavonoids from Mulberry is studied.During the extracting process,four main factors including concentration of extracting solution,temperature,time and ratio of solid to liquid are studied by using single factor analysis method.The optimal process conditions are obtained by orthogonal analysis as follows:methanol concentration 60% ,ratio of solid to liquid 1:30,extracting duration 3 h and extracting temperature 80℃ .Right from the mulberry leaf extract flavonoids oxidation, Reduction in capacity use and removal of super oxide anion radical oxidation resistance of the two measured. Different oxidation resistance of the model, in the oxidation resistance, Reduction Methods for determination of the oxidation resistance than super oxide anion radical removal of the measured antioxidant Large, and can be seen from the first model of the oxidation resistance also increased substantially greater than the second model of a substantial increase oxidation resistance.
