Title Study On Extraction Technology Of Oat Bran Protein
Abstract:
This study used Oat bran powder that had been drafted with diethyl ether to prepare the oat bran protein. The method of preparing oat bran protein was alkali extraction and acid precipitation. The extraction process was optimized by single factor such as ratio of liquid and material, pH, extraction time and extraction temperature. Then, we used orthogonal experiments to elect the most suitable process conditions for extracting oat bran protein. They were determined as follows: ratio of liquid and material 9:1, pH 9.6 and extraction time 30 min, extraction temperature 50℃. 46.73% protein was extracted from oat bran under these conditions. By providing the PI of oat bran, pH 4.0 is preferable for the precipitation of oat bran protein in extraction supernatant for consideration. Then, we compared the yield of oat bran protein after adding α-Amylase or Alcalase for pretreatment of materials, based on the most suitable conditions determined by orthogonal experiments. One purpose of this study is prior preparing of ACE inhibitory peptide that hydrolyzed from oat bran protein.
