Study on the relationship between agaricus bisporus browning and activity of polyphenol oxidase
Abstract: This article introduces the progress of agaricus bisporus(including the nutritional value and economic significance of agaricus bisporus), polyphenol oxidase activity and nature, and measured the agaricus bisporus browning and its corresponding level of polyphenol oxidase (PPO) activity .Browning is agaricus bisporus which after picking under a certain temperature storage at different times after the extent of browning,it is used color measurement to measure , the size of L is degreed the agaricus bisporus browning in this test, L greater value, as the color greater white and as the browning lighter. PPO catalytic various of phenol and O2 oxidation of quinine. This study was used as the substrate catechol, sodium phosphate buffer pH6.5 response system, PPO catalytic formation of catechol brown quinone, Spectrophotometer at 410nm in reaction to the OD values change, use the reading of OD value rose to determine the size of PPO activity. The results show PPO is concerned with agaricus bisporus browning process, and with a certain relationship degree of browning .
