Abstract:Sulforaphane (1-isothiocyanate-methanesulfonyl butane) , is one of the most powerful anti-cancer ingredients have been found in vegetables so far ,a large number of in vitro experiments to prove its good anti-cancer function, so more and more attention has been paid, because of the high research value and broad market prospects. In this work, the author uses high performance liquid chromatography to compare the different organic solvents on the extraction rate of sulforaphane effects, with extract raw materials of broccoli seed. Now,we has prepared three different kinds of sulforaphane microcapsule samples,with three different types of wall material:gelatin and β-cyclodextrin, whey protein and maltodextrin, calf serum and glutaraldehyde. By scanning electron microscopy, particle size distribution measurement, the embedding rate and get rate measurement, and the stability test of sulforaphane before and after embedment and so on, analysis of advantages and disadvantages different of wall materials, which been used to embed sulforaphane. Comprehensive analysis of various factors, in this work, Ethyl acetate is the best extractant to extract sulforaphane, and whey protein and maltodextrin is the best wall material of the three different wall materials to embed sulforaphane.
