Abstract: Monascus strains used in this study, corn flour, rice, etc. as raw material by way of producing solid-state fermentation of red pigment, red pigment fermentation: corn flour 5g, salt solution 3ml (Potassium Hydrogen Phosphate 2g, ammonium nitrate 3.5g, 7, magnesium sulfate 1g, sodium chloride 1g, 1L water). And 80% ethanol extract of red pigment. Experimental analysis through the instrument spectral properties of red pigment, and the stability experiments of pH, metal ions, light (non-direct sunlight, direct sunlight, ultraviolet light), heating, oxidizing and reducing agents, preservatives, etc. on the red pigment effects. Get maximum absorption of red pigment in the 508nm, pH, strong oxidants, strong direct sunlight on the red pigment of relatively large, while the other factors relatively speaking, on the red pigment has little effect.
